Traditional Southern Italian Menu

Join Executive Chef Roberto & Pietro as they team up in the kitchen for an authentic hands-on cooking course in Neapolitan cooking. Learn about the treasures of this region’s cooking style using local fresh organic fish, meat, fruits and vegetables of the Amalfi Coast. Neapolitan cooking is a classic, and this class gives you its history over time. Cook Neapolitan traditions, while you learn how the tomato made its way into Italian cooking and where and when pasta was first invented. Join our dynamic duo for an authentic, fun-filled class and learn how to make Acqua Pazza, fresh sea bass slow-cooked with herbs, potatoes and sweet cherry tomatoes; or Linguine, Gamberetti & Fiori di Zucca, fresh bright orange squash flowers sautéed with pink baby shrimp served with linguine; Boscaiola, Neapolitan pasta with mushrooms, Tonno, fresh local tuna simmered with capers & olives; Manzo Con Foglie di Limone, filet of beef layered with lemon leaves on a skewer, Involtini Di Melanzane stuffed eggplant rolls or Tiramisu’ al Limone, our Chef’s signature dessert using local Amalfi lemons.

The cooking class is hosted in our professional kitchen set in a magnificent grotto, naturally carved into the side of the coast, with a panoramic view of the Tyrrhenian Sea spanning Li Galli Islands to Praiano. This cooking class focuses on the healthy Mediterranean diet, using our own 100% Extra Virgin, first-cold-pressed, Olive Oil. The warm Mediterranean climate, fertile volcanic soil and sea breeze provide the perfect conditions for healthy abundant produce in southern Italy.

Tie on your apron and get cooking for Neapolitan Cooking with old-world recipes & new techniques. Dinner follows with the foods made in class. Toast with a great glass of homemade Aglianico, red, or Falanghina, white, wine and end with a sweet dessert, both included. After your class, linger on the terrace, watch the sun set and enjoy the wonderful dinner prepared in class.

Lemon Lifestyle™

Join Executive Chef Roberto in Positano for a lemon-infused cooking class using the sweet lemons of the Amalfi Coast. We start our class touring the organic gardens filled with wild arugula, red cherry tomatoes, eggplant, cucumbers, red peppers, zucchini & eggplant. 
An abundance of basil, sage, parsley, oregano, rosemary and mint, grow in our herb garden. 

Sweet orange, lemon, pink grapefruit, banana, apple, peach, and kiwi grow wild.  Hundred-year-old olive trees fill the garden; and from our olive trees, we produce and bottle our own 100% Extra Virgin, first-cold-pressed, Olive Oil, also used in our class.  Wild mirtillo, growing dark purple berries, provide us with bushels of this magical fruit; and in the fall we make & bottle organic Mirtillo in our kitchen.  Mirtillo is an Italian after dinner drink that helps with digestion.  

Choose to pick some of the wild arugula or basil, before we head to the kitchen and taste the flavors.  An informal overview and the secrets of cooking with lemons are provided.  Our Chef will take you through a hands-on class featuring recipes from our Lemon Lifestyle program, with an accent on the healthy Mediterranean diet.  Our cantina-kitchen for this class is set in a naturally carved grotto with a panoramic view of the Tyrrhenian Sea spanning Li Galli Islands to Praiano.

Save your appetite, roll up your sleeves and get cooking in this unique & informative cooking class, including the history of lemons and their use, along with techniques and tricks of the kitchen from our Chef. Lemon Lifestyle Menu
This class features our Lemon Lifestyle menu-using the bright yellow organic lemons that grow on the Amalfi Coast.  Learn how to make a lemon-inspired menu including an array of fresh vegetables drizzled with lemon oil or a lemon infused antipasto; pasta served with a delicate lemon sauce; grilled fish wrapped in lemon leaves and for a sweet ending~torta di limone for dessert.

Pasta Making Positano
With Chef Maria

Tie on your apron and get our your rolling pin for a hands-on class in fresh pasta making. The afternoon class led by Chef Maria Lucia in Positano.  She will teach you, from start to finish, how to mix, roll and shape the delicate pastas of this region-linguine -into mouth-watering creations. She also shares the Italian philosophy and practice of making just the right sauce for just the right pasta. In Italy each pasta pairs up with a different fresh sauce. There are over 1000 pastas in Italy, and this class will give you direction on the basic styles and sauces that go into making each kind- stuffed, rolled, or twisted, varieties include: linguine, tagliatelle, farfalle, scialatielli, to name a few.

Participants meet in the kitchen at 4:30pm with an introduction to the class. She will take you through a hands-on class featuring fresh pasta making techniques, and sauces from traditional southern Italian cuisine including cherry tomatoes, lemon sauce, fresh vegetables, fish or meat. This class and its cooking techniques are based on the healthy Mediterranean diet. Class includes preparation of 2 pastas & 2 sauces.

Our cantina-kitchen is set in a grotto that was naturally carved into the side of the coast and offers a panoramic view of the Tyrrhenian Sea spanning Li Galli Islands to Praiano. Tie on your apron and get cooking for an afternoon filled with creative, fun recipes, advanced techniques and tricks of the kitchen with us. Everyone eats the foods prepared in class on the terrace. Market Visit & Cooking Class In Positano With Chef Maria

Join us in Positano for a market visit & cooking class featuring southern Italy’s jeweled recipes under the direction of Chef Maria! This one-day class starts out with visit to the local marketplace, where you will meet the purveyors of the area’s prized fruits, vegetables, fish & cheese of the Amalfi Coast. Following the market visit, head to the kitchen where you will learn how to prepare the famed dishes of Positano. We start off a visit through the market of fruits and vegetables. Rows of tomato line up straight alongside plump eggplant, green zucchini, assorted lettuce varieties, red peppers & basil, sage, parsley, oregano, rosemary and mint. Sweet orange, lemon, banana, kiwi, and olive trees surround Positano. From the olive trees, we produce and bottle our own Extra Virgin Olive Oil, which is First Cold Pressed.

After the tour, we head to the kitchen and prepare to cook. Sharing family-old recipes and technique we use seasonal ingredients and fresh herbs & spices from the organic garden. He leads you through traditional recipes from appetizers to pasta & sauces; followed by dinner with the foods prepared in class. The Mediterranean cantina-kitchen is set in a beautiful garden with a sea front view. Everyone eats the foods that were prepared in class following. Toast with a great glass of local red or white wine, and end with a sweet dessert, both included. Market tour & hands-on cooking class followed by dinner.

Cooking With Chef Rosa
In The Hills Of Positano
A Unique Food & Culture Experience

Join Chef Rosa for an early morning cooking class at her hillside farmhouse estate. This cooking experience is a unique opportunity to learn how to make artisan Mozzarella and old-world cheese. Rosa takes fresh milk and works it into a creamy cheese, weaving it into braids and twists. Then it’s off to the kitchen to make Neapolitan pizza, pasta or even limoncello. Whether you choose limoncello, pasta or pizza, roll up your sleeves for a morning of kneading and rolling! Rosa will teach her technique for stretching and rolling the dough into the traditional Margherita pizza baked in a wood-burning oven, or the art of making fresh pasta tossed with a light sauce. After the class, everyone joins in and eats the foods prepared in the class. Local wine, water, dessert, limoncello & caffè included.   After lunch, visit the family’s organic lemon grove and olive grove; with a stop at the olive oil making shop. Informal discussion & tasting of the farm’s prized oil are offered.

Pizza-Making With Pietro
In Positano

Join Pietro, our professional pizzaiolo, who will show you the technique and methods for making true Neapolitan pizza the old-world way. Pietro, who has mastered his craft with the best artisans in Italy, and at the Pizza Academy in Naples, leads you through pizza and focaccia making, while sharing his recipes for making fresh tomato & basil sauce, garlic & oregano, vegetable or seafood toppings. Using a wood-burning pizza oven, he teaches his technique for rolling dough into perfect disc shapes, cooking at the ideal temperature and turning the pizza just the right way. Learning to make pizza in Italy is an art, and Pietro shows you how. This class is a popular choice for the professional pizza-maker and the pizza-chef wanting to expand their art & technique and bring it back to their own kitchen. Pietro’s class is also the choice for children, he takes them through step-by-step; measuring, mixing, rolling and baking with a family-style pizza party to follow.

After class everyone eats the pizza prepared in class.  Toast with a glass of local red or white wine with a dessert, included.

Our classes are available for one day or we can tailor-make a program for an extended stay at our charming B&B set in a quiet garden directly on the Amalfi Coast in Positano, and just a 15-20 minute walk from the busy square.

Our charming Bed and Breakfast sits in a garden that is perched high on a cliff in a private estate. Each bedroom faces the sea and has its own terrace with café table and chairs enclosed with greenery. Cool ceramic tiles line each bedroom. Each cozy room also has a private bathroom and shower, mini bar, air conditioning, and daily maid service. Breakfast is served daily on the terrace café by the cappuccino bar under the flowered pergola. The rooms are bright and comfortable. In the evening, limoncello, wine and drinks are served at the terrace café.

Mediterranean gardens surround the property, with fig, kiwi, olive, lemon and orange trees, creating a truly magical setting. The entire garden, set under spectacular Bougainvillea, overlooks the sea and is a 15 minute walk from Positano’s center or you can catch the orange minibus that circles regularly. Guests can pick fresh seasonal produce from the organic garden or stop and sunbathe at the property’s solarium. A panoramic view spans Li Galli Islands, the Amalfi Coast and Capri. The Tyrrhenian Sea is literally at your feet, and the Arienzo beach is just a 5-minute walk along the footpath. As the sun sets, sit back on your terrace and watch the world-class yachts and local fishing boats ripple through the Cerulean waters. Shuttle boats connect to Positano beach and back running regularly. From Positano’s port you can water taxi to Sorrento, Ischia, Capri Amalfi and Naples.
