Simple, saltless and safisfying! Flat bread, schiacciata, rusks, focaccia, breadsticks, grissini, fettunta and panunta, garlic breads and large thick-crusted oval loaves, are the breads of Tuscany. Bread in Tuscany is unlike any other bread in Italy because it is made without salt. This dates back to Dante’s time and has not changed since. Some say salt was not used in bread making because it was too expensive in those days, while others say Tuscan food is already salty enough and the tradition carries on today. However Tuscan bread is still delicious and in this special bread making only class you will learn how to mix the yeast, roll, twist and bake to perfection.
Specific technique along with historical notes blend for this one-day bread making workshop. Enjoy preparing everything from traditional wood-burning oven baked breads to la panina, a typical Montepulciano specialty bread with pancetta kneaded into the dough.
