Join Chefs Giuseppe & Vincenza in Trevi – north of Spoletto and southwest of Perugia, Umbria for hands-on cooking classes featuring traditional Umbrian dishes in their professional kitchen. Their motto is: ‘respect tradition and the territory.’ This translates to, we  use seasonal, local products and traditions of our region.  Umbria, like all regions of Italy, has traditional foods, and styles of cooking that reflect the history and flavor of the land.  In their professional kitchen, Chefs Giuseppe & Vincenza share with you the history, food notes and technique of Umbrian cuisine in recipes that can be recreated at home.

1-Day Cooking Class, Trevi, Umbria

Get busy in the kitchen making Umbrian classics such as stringozzi, a thick pasta type served with wild asparagus; handmade tagliatelle; chestnut soup; or risotto with asparagus represent just a few samples from their repertoire. Both meat and fish reign in this part of the world where products from the green hills and local lakes are staples; so if you like carne, meat, there is roasted rabbit, boar, venison, goose, duck, and ‘drunken chicken’ slow cooked in local wine. Fresh water shrimp, trout and perch are also prepared in our hands-on classes.  Hearty antipasto, plump pasta, creamy soups, secondo,-main courses with dessert and local wine are included in each hands-on class.  Truffles, both black and white, also grow in abundance in Umbria. This prized tuber is used to top pasta, salads, cheese, omelets, and you’ll find it in cheese and even desserts. Lunch or dinner follows  and includes the foods that were prepared in class.

Chefs Giuseppe & Vincenza share their kitchen, skill and technique with each guest.  Special menu requests, such as vegetarian, are always respected.  Cooking classes are taught in English with opportunities, of course, to learn Italian words and phrases in the kitchen.  Each cooking class is approximately 2.5 to 3 hours with classes starting at 10am.

After each cooking class, lunch follows and includes all the foods prepared in class. Wine and beverages available at a surcharge.

Program Includes:

  • Hand-on cooking class with lunch following on the food that was prepared during class, local wine included. Wine and beverages available at a surcharge.

1-Day Market Tour & Cooking Class, Trevi, Umbria

Start off your day with a visit to the local produce markets that showcase Trevi’s vendors, food shops and purveyors. Learn about local produce – breads, cheeses and the wonderful olive oil, and look out for seasonal ingredients like mushrooms, wild asparagus, lentils from Casteluccio, and even truffles in the right season. Salami and other specialty pork products are sold in special ‘norcino’ butchers who are regarded as some of Italy’s finest food artisans. The area is also famous for its chickpeas, cereals such as farro and barley, and its chestnuts, all of which are put to wonderful use in the kitchen. Discover interesting food shops stocked with local products led by your Chef for an insider’s view on food, wine and culinary food notes. Tastings included.

Following the market and artisan shop tour, everyone joins in for their cooking class with Chefs Giuseppe & Valentina.
