Join Chef Marie for a colorful outside market tour, shopping for ingredients for your cooking class & a one day hands-on cooking class in the heart of Florence. Step into her kitchen and learn how to create authentic Florentine foods and other Italian classics, while participating in hands-on cooking and discovering new techniques for each recipe. The hands-on cooking classes include preparing antipasto, pasta, fish or meat dish, and delicious desserts. Chef Marie will lead you through each step using only fresh in season organic vegetables that she buys daily at the nearby Ambrogio Market.
The Ambrogio Market Tour, Shop With The Chef
Before your cooking class you will visit the historical Ambrogio Market located in the ancient neighborhood of Camaldoli with Chef Marie. Artisan vendors display their seasonal produce of vegetables, fruits, cheese, bread, salumi and local products. It is a colorful scene as vendors shout out their specials of the days, and Italians of all sizes negotiate for the best product and price. Chef Marie wicker basket fills quickly as she knows what is in season and how to shop. Some of the fresh ingredients are bought together for the class. Return to her kitchen with the morning purchase and get cooking. Please note that the market is open mornings only Monday thru Saturday and closed on public holidays.
Learn the art of Florentine cooking under the direction of Chef Marie. Her passion started when she was a child and continued ash she said, “it was always in my heart and soul.”
Some recipes on her menu are bread making, including,-coccoli con prosciutto, schiacciata all’olio, and bruschette. There is fresh pasta, such as crespelle alla fiorentina, tagliatelle ai fungi porcini, and ravioli di ricotta. Also learn to make a great Tuscan pappa al pomodoro or Panzanella. Main courses or secondi, include,-pollo in fricassea, scamerita col cavolo nero, and polpette della nonna. Desserts include,- torta di mele, cantucci, and tiramisù al vinsanto to name a few. Following the seasons, recipes vary.
Everyone joins around the table and enjoys the foods that were made in class following. Local wine, dessert and great conversation always included.
Chef, food lover, and member of a professional choir at the School of Music in Fiesole, there is always music in Marie’s kitchen!
The cooking classes, whether one day, two day or more, will have you cooking up some of the regions most treasured recipes! She welcomes each and every guest into her kitchen, while sharing the secret addresses of Florence for food, wine, artisan products and local produce.
Additional select Tuscan wines are available for you during your cooking classes. Chef Marie will suggest and help you order them, please let us know.
Classes begin at 10:30am and end approximately at 2:30pm.
- Market Visit. (Please note that the morning market is not open on Sundays or public holidays)
- Hands-on Florence cooking class including the preparation of a first course (such as pasta or risotto), second course (such as meat, fish or vegetarian), side dish and dessert.
- Lunch follows on the foods prepared in class. Local wine included. Select wines available at a supplement.
$280 per person, based on minimum two people. All taxes and VAT included.
