Join Mauro, home Chef, food lover and purveyor, in his professional Tuscan kitchen for a flavor-filled cooking experience in the heart of Lucca. He grew up cooking in the kitchen with his grandmother using ancient flavors, Tuscan traditions, and family recipes from his native land. Join our authentic, educational, tasty cooking classes led by Mauro and his wife in Lucca.  Whether it is traditional Tuscan or Kosher Italian, tie on your aprons and get ready to cook, eat and learn his cooking secrets in this quaint Tuscan town!

Cooking Classes

Mauro started to cook at the early age of 6 years old and continued to develop his love and passion for cooking family style. His food experience includes working with chefs, wine producers, olive oil producers, butchers, and most important, local Tuscan women who really showed him how to cook!

With hands-on experience and knowledge in a world of food experts & artisans, he then opened his own kitchen. Today he shares his knowledge for food and wine along with his wife and family at home in Lucca.

One Day Traditional Cooking Class

Tie on your aprons and get ready for a 1-day hands-on cooking class in the kitchen with Maestro Mauro!  He uses only seasonal fresh products of the region in each cooking class, such as porcini, chestnuts, virgin olive oils, polenta, truffles, and of course the great wines and cheeses.  Menus change seasonally, with a selection of vegetarian, meat and fish recipes too.  After each cooking class, everyone enjoys the foods that were prepared in class on the outdoor patio (weather permitting) for lunch or dinner.

Classes are from 10am – 3pm.

*Please note: the One Day cooking classes are located outside of the center of Lucca, a short drive or Taxi ride from the city.

One Day Kosher Italian Cooking Class

Did you know that the Italians learned the delights of fried and marinated fish (ceviche-style) from the Sephardic Jewish immigrants that came to Italy? Just because you pass on the Prosciutto, doesn’t mean you have to miss out on the delights of eating in Italy. Join Maestro Mauro and his Italo-Israeli wife for hands-on Kosher cooking in Lucca to explore Jewish-Italian Kosher cuisine.

Maestro Mauro and family as they lead you through the method, while sharing with you the rich food history of Italian-Jewish foods.  Start with the Caponata; a slow cooked mixture of capers, olives and garlic topped with delicately fried cubed eggplant, fresh handmade pasta (pasta all’uova), and for a sweet ending, the Torta di Noce, a deep choco and nut Kosher cake. The Kosher method and recipes can be easily recreated at home in your own kitchen.

Also upon request, learn to prepare the perfect Shabbat dinner, a sample menu may be Brasato Al Vino Rosso, braised beef in a red wine sauce, Zucchine Trifolate, Pasta Estiva con peperoni e pomodori freschi, semolina pasta salad with summer vegetables, and Rotolo di Tacchino Farcito, farm-raised stuffed turkey slow cooked. This is a sample of the delicious Kosher specialties the husband and wife team will teach you how to make.

Kosher classes are tailor-created to individual requests and needs.

The Kashrut Certification and supervision for the 1-Day Class is $435 (no matter how many clients) and for the 3-day program is $755 (no matter how many clients).
The Kosher supervision is carried out by a Capo Rabbi.  All utensils are Kosher, including the oven and stove, meat, wine and recipes-all Kosher.

Kosher Cooking Class Includes:

  • 1 hands-on Kosher cooking class followed by lunch or dinner with everyone enjoying the foods that were prepared in class – choice of meat or dairy menu, and ward-winning D.O.C. Colline Lucchesi/Montecarlo Kosher wines.
  • Cooking apron and recipes
  • Aperitivo, cocktail

Call for updated rates. Airfare not included. Group transfers for any cooking tour or tours that include transfers, are for the group and are not private. Transfers before, after or to another destination outside of your cooking tour are not included in the program price.
