Perugia and Assisi conjure up images of Saint Francesco, sweet Perugian chocolate and emerald green olive oil. Umbria, not on every tourist’s path, is a land often referred to as the “green heart.” Umbria’s capital, Perugia, is known for its hazelnut dipped chocolate drops wrapped in a poetic message- just another reason to visit this region nestled south of Bologna and north of Lazio.

Executive Chef Giuseppe, a native of Umbria and a graduate of the Assisi’s Culinary School opens his recipe book and leads you in hands-on cooking classes with Umbrian recipes that date back to the ancient Etruscans. Learn how to make pastas, like stringozzi tossed with asparagus, roasted fresh water shrimp or a sweet chestnut soup.

Between your cooking classes, explore ancient churches and visit the Museo della Civilita’ dell’Olivo, olive oil museum. Historical, artistic, elegant & comfortable, romantic and tranquil are the characteristics of the property, as modern comforts connect with the charm of history.

Cooking Classes

Join Executive Chefs Giuseppe & Vincenza at the Villa in Trevi, – north of Spoletto and southwest of Perugia, for your four hands-on cooking classes featuring traditional Umbrian dishes. Your Chefs’ motto is: ‘respect tradition and the territory.’

Their Umbrian classics such as stringozzi or strangozzi – a thick pasta type served with wild asparagus; handmade tagliatelle; chestnut soup; or risotto with asparagus represent just a few samples from their repertoire. Both meat and fish reign in this part of the world where products from the green hills and local lakes are staples; so if you like carne, meat, there is roasted rabbit, boar, venison, goose, duck, and ‘drunken chicken’ slow cooked in local wine. Fresh water shrimp, trout and perch are also prepared in our hands-on classes, and lunch or dinner always follows with the foods that were prepared in class. Truffles, both black and white, also grow in abundance in Umbria. This prized tuber is used to top pasta, salads, cheese, omelets, and you’ll find it in cheese and even desserts.

Your Chefs’ international experience has Umbrian recipes reaching Australia, USA, Vietnam, Russia, Japan, China, India and more. Cooking classes are conducted in English with opportunities, of course, to learn Italian words and phrases in the kitchen. Wine and beverages available at a surcharge.

Trevi & The Olive Oil Museum

Trevi is a charming medieval Borgo located on the top of a hill in Umbria, with incredible views toward the nearby towns of Assisi and Spoleto. Rich in art and history, Trevi was constructed in concentric circles, and resembles a spiral-shaped shell that preserves intact its ancient heart. Trevi is surrounded by two sets of ancient walls: the interior wall is the mura romane, the Roman walls, which have protected this fortified town in its strategic position on the hill since the first century BC. Little remains of the Roman walls today, however the outer walls, the mura medievali, dating from 1264 AD, still enclose the historic center of Trevi.

Trevi is known for its very high quality olive oil, and the Museo della Civilita’ dell’Olivo, is a museum dedicated to local olives and olive oil. The museum celebrates the rich heritage in olive oil making in Trevi and Umbria, and traces the history of this art form. In fact, not far from Trevi stands a 1700 year-old olive tree named after Saint Emiliano, the patron saint of the town, that is one of the oldest olive trees in Italy. You won’t have trouble finding it, as it is the only olive tree with a trunk of about nine meters in girth!

Trevi offers a wonderful location for visiting Umbria as it is just about a half hour drive from Assisi, Spello and Spoleto, and just under an hour to the city of Perugia.

Accommodations

The Villa is one of the most exclusive four-star hotels in Umbria, comprised of the charming complex of Valenti Palace, Urighi Palace and the Little Borough of Mostaccio. Valenti Palace and Urighi Palace, recently renovated to preserve the original structure and materials, offer 34 marvelous rooms, all furnished in style, to give each guest a taste of the past with all the comforts of the present. The Little Borough of Mostaccio offers seven double rooms and three apartments, enriched with characteristic wooden ceilings.

The bedrooms feature elegant wooden ceilings and frescoes along with panoramic views. Each bedroom has a private bathroom enriched with high quality colored marble and ceramic; and many rooms offer Jacuzzi hydro massage baths. In addition, all the rooms offer modern amenities including air conditioning, minibar, safe, hairdryer, satellite TV, direct line telephone, attachment for personal computer and internet connection. An internet point is also located by the front desk for guest convenience. Handicap accessible rooms also available; please ask to ensure an accessible room.

Day 1: Arrival & Welcome ‘Trevano’ Dinner

  • Arrival & check in.
  • Welcome Dinner is served featuring a special Trevano Menu. Aperitif and four-course dinner included. Wine and beverages available at a surcharge.

Day 2: Cooking Class 1

  • Breakfast is served.
  • After breakfast, meet Chefs Giuseppe & Vincenza for your hands-on Cooking Class 1. Lunch follows on the foods prepared in class.
  • Our sommelier is on hand to help match Umbrian wines with the foods prepared during your cooking class. Wine and beverages at a surcharge.
  • The afternoon is free with a suggested visit to a local olive mill. Please ask for more details, a ‘olived Bruschetta’ tasting can be arranged upon request.
  • Dinner is served. Aperitif and four-course dinner included. Wine and beverages available at a surcharge.

Day 3: Cooking Class 2

  • Breakfast is served
  • Head into the kitchen for a morning with Chefs Giuseppe & Vincenza for your hands-on Cooking Class 2.
  • Lunch follows on the foods prepared in class. Our sommelier is on hand to assist in pairing local Umbrian wines with the foods prepared in your cooking class. Wine and beverages at a surcharge.
  • Afternoon is free to explore the area on your own or relax at the Villa.
  • Dinner is served. Aperitif and four-course dinner included. Wine and beverages available at a surcharge.

Day 4: Cooking Class 3 & Departure

  • Breakfast is served.
  • Meet Chefs Giuseppe & Vincenza for your final Cooking Class 3. Lunch follows on the foods prepared in class.
  • Our sommelier is on hand to assist with pairing local Umbrian wines with the foods prepared during your cooking class. Wine & beverages available at a surcharge.
  • Final discussion and goodbyes.
  • Check out and departure after lunch. Arrivederci!
