Perugia and Assisi conjure up images of Saint Francesco, sweet Perugia’s chocolate and emerald green olive oil.  Umbria, not on every tourist’s path, is a land brimming with verdant landscapes, peaceful Medieval villages and ancient art.  Perugia, Umbria’s capital, is known for its hazelnut dipped chocolate Baci, each chocolate bite is wrapped in a poetic message.  There’s also the international jazz festival, chocolate, Perugia ceramics and handmade linens that are part of the magical traditions.

Between your cooking classes and visits to famous landmarks, such as the Museo della Civilita’ dell’Oliv and the local extra virgin olive oil museum, you’ll deepen your appreciation for excellent food and olive oil while sipping Umbria’s fine wines.  So check into the beautiful property and relax because we have a fun-filled and delicious week planned for you!!!  When your Perugia Cooking Vacations week is over, you’ll be cooking like a Chef In Umbria!!!

Umbrian Cooking Classes

Join Chef Giuseppe and Vincenza welcome you to the villa kitchen in Trevi for hands-on cooking classes featuring traditional Umbrian fare.  The philosophy in this kitchen is simple:  respect for tradition and the territory, and cooking in the rhythm of the seasons.  You will mix and roll out stringozzi or strangozzi – a thick pasta type served with wild asparagus; handmade tagliatelle; chestnut soup; creamy risotto with asparagus.  Both meat and fish reign in this part of the world where products from the green hills and local lakes are staples – from fresh farm-to-table fruits and vegetables to naturally-raised meat and game.  Think roasted rabbit, boar, venison, goose, duck served with braised fennel, grilled pumpkin and stuffed eggplant. Fresh water shrimp, trout and perch are also prepared in our hands-on classes for those who like fish.  Black and white truffles are shaved on risotto and fresh pasta.  Creamy butter, farm fresh eggs, sugar and flour transform into delicious desserts like biscotti, pan cotta, cakes, fruit tarts, and semifreddo, a creamy gelato.  Following each cooking class, everyone enjoys the foods that were prepared together with a toast of local wine.

Trevi & The Olive Oil Museum

Trevi is a charming Medieval borgo located on the top of a hill in Umbria, with incredible views over Assisi and Spoleto. Rich in art and history, Trevi was constructed in concentric circles, and resembles a spiral-shaped shell that preserves intact its ancient heart. Trevi is also surrounded by two sets of ancient walls: the interior wall is the mura romane, the Roman walls, which have protected this fortified town in its strategic position on the hill since the first century BC. Little remains of the Roman walls today, however the outer walls, the mura medievali, dating from 1264 AD, still enclose the historic center of Trevi.  It is also known for extra virgin olive oil, and the Museo della Civilita’ dell’Olivo, a museum dedicated to local olives and olive oil.  The museum celebrates the rich heritage in olive oil making in Trevi and Umbria, and traces the history of this art form.  Not far from Trevi stands a 1700 year-old olive tree named after Saint Emiliano, the patron saint of the town, that is one of the oldest olive trees in Italy. You won’t have trouble finding it, as it is the only olive tree with a trunk of about nine meters in girth!

Umbria Accommodations

The villa property is one of the most exclusive four-star hotels in Umbria, comprised of the charming complex of Valenti Palace, Urighi Palace and the Little Borough of Mostaccio.  Valenti Palace and Urighi Palace, recently renovated to preserve the original structure and materials, offer 34 rooms furnished with elegant bedding and linens for your comfort.  Bedrooms feature elegant wooden ceilings and frescoes along with panoramic views. Each bedroom has a private ensuite bathroom and beautiful Italian marble and ceramic – some rooms have Jacuzzi hydro massage baths. All rooms include air conditioning, a minibar, safe, a hairdryer, satellite TV, direct line telephone and attachment for personal computer and internet connection.  Italian breakfast is served daily and includes artisan bread, toast, yogurt, granola, pastry and cakes, coffee, tea and fruit juices.

Itinerary~ 4 Days, 3 Nights

Day 1: Arrival & Chef’s Welcome Dinner

  • Arrival & check in.
  • A Chef’s tasting dinner including an aperitivo and  four-course menu.  Local wine and beverages available at a surcharge.

Day 2: Cooking Class 1

  • Breakfast is served.
  • Tie on your aprons for your hands-on cooking class 1 preparing a full course men.  Lunch follows and includes the foods that were prepared in the class.  Our sommelier is on hand to help match Umbrian wines with the foods prepared during your cooking class. Wine and beverages at a surcharge.
  • After lunch, pick up by your private driver for visit to Casteluccio, Norcia and an artisan salumi and prosciutto maker. Casteluccio is a small town that sits on the edge of a crater-like formation in the lofty Appenines and is famous for its top quality lentils. It’s a fabulously untouched place where you’ll be struck by the wonderful, old-fashioned lifestyle that still exists and by the surrounding views of rolling countryside surrounded by towering mountains.  After your tour, return to the property
  • Dinner is served. Aperitif and four-course dinner included. Wine and beverages available at a surcharge.

Day 3: Cooking Class 2

  • Breakfast is served
  • Tie on your aprons for cooking class 2 preparing a full course men.  Lunch follows and includes the foods that were prepared in the class.  Our sommelier is on hand to help match Umbrian wines with the foods prepared during your cooking class. Wine and beverages at a surcharge.
  • After lunch, relax at the property.  You may also add on an excursion to Sagrantino.  Your private driver will pick you up for excursion to Montefalco with visit to Sagrantino wine maker, including tasting of red wine of Montefalco. Montefalco is a delightful Medieval town and is often referred to as ‘the little balcony of Italy’ thanks to the magnificent views it offers over the surrounding countryside. Wander round the narrow streets of the historic center, visit its numerous Medieval churches and marvel over the fact that this town turned out no fewer than eight saints! And last but not least, visit a Sagrantino wine producer and enjoy a tasting of the delicious red wine of Montefalco.
  • Dinner is served. Aperitif and four-course dinner included. Wine and beverages available at a surcharge.

Day 4: Cooking Class 3 & Departure

  • Breakfast is served.
  • Tie on your apron and head to the kitchen for a morning with Chefs Giuseppe & Vincenza for your hands-on Cooking Class 3.  Lunch follows on the foods prepared in class. Our sommelier is on hand to assist in pairing local Umbrian wines with the foods prepared in your cooking class. Wine and beverages at a surcharge.
  • After lunch, pick up by your private driver for excursion to Assisi, and local towns around Trevi. Assisi is famous the world over for the figure of San Francesco, the patron saint of animals, the environment and one of the two patrons of Italy. Assisi has much to offer but one place visitors inevitably head is to the gorgeous Basilica of San Francesco d’Assisi (a World Heritage Site) with its unique fresco work by Cimabue and Giotto, including the series of 28 frescoes ascribed to the young Giotto along the lower part of the nave, now freshly restored after the tragic earthquake damage of 1997.
  • Check out and departure after lunch. Arrivederci!
