Ravello Neapolitan Cooking Class & Mozzarella Cheese Making
Our Ravello tour includes learning how to prepare Neapolitan recipes and making Mozzarella cheese too! Roll up your sleeves as we begin with antipasti: hand-made panzarotti, stuffed rolled eggplant and zucchini flowers; primi such as fresh hand-made ravioli Caprese stuffed with ricotta & eggplant, or ravioli stuffed with pumpkin, or gnocchi; secondi: acqua pazza, a local sea bass slow cooked in cherry tomato, basil with olive oil, stuffed sole or pollo al limone and Chef Gaetano’s sweet desserts: pastiera, sfogliatelle, babà, and torta Caprese, torta di mandorle, topped with caramelized oranges and a steamy espresso, or delicate crostata filled with fresh seasonal fruits-to name a few!
You’ll also learn how to make fresh Mozzarella with an artisan. Starting with fresh cow’s milk from the local farmer, he turns the milk into creamy Mozzarella. Following, everyone enjoys the mozzarella prepared with the antipasto.
During your class, learn the importance of herbs and seasonal fruits and vegetables. Menus vary according to the seasonal and we highly respect food allergies and diet needs.Cooking classes are approximately 2.5 hours.
You will learn new recipes and cooking technique, all while being immersed in the local traditions of this ancient Medieval village often called, between sea and sky.

Dessert Cooking Class With Chef Gaetano ~ 1 Day Class
Executive Chef Gaetano is the master of making the man local Neapolitan desserts that love. While it’s true that chocolate is the absolute protagonist in this program, remember that the Amalfi Coast is home the sfusanto limone. These fragrant lemons are the secret ingredient of all the coast’s pastries including, Delizia Al Limone, lemon cake bathed in Limoncello, lemon Caprese, biscotti and even candied lemon peel. Chestnuts are another precious local ingredient used in making castagnaccia, a chestnut and chocolate cake. And the Neapolitan desserts, such as pastiera, sfogliatelle and babà, and torta Caprese are just a sample of this region’s dessert recipes. Our dessert making clases include s the preparation of 2-3 desserts with tastings following. Menus vary according to the seasonal and we highly respect food allergies and diet needs.
