Bologna One Day Cooking Class

Our Chefs, two sisters in the kitchen, are Sfogline, the Bolognese term for women who make pasta by hand in the traditional way with an old-fashioned rolling pin and wooden tools. Start by preparing the ‘OO Farina,’ the finely ground white flour, knead the dough by hand and allow it to rest, then roll out the sfoglia and fold, twist and create the small delicate pastas that Bologna is so famous for. Under the guidance of our professional Chefs, you will learn the technique for mixing, kneading, rolling and creating perfect tortellini & tortelloni, tagliatelle lasagne and gnocchi, with delicious stuffings and sauces such as burro e salvia, butter and sage, Bolognese, meat sauce, pomodoro, traditional tomato sauce, and more.

Choose Pasta Making, Bologna Traditional or Seasonal Fish, Meat or Vegetarian Menus.  Lunch or dinner always follows on the foods prepared in class, with a toast of local wine.

Program Includes:
