Take a culinary journey to Calabria – Southern Italy’s less traveled destination. Your 6 day/5 night gastronomical tour is set in the family accommodation in Capo Vaticano~a beautiful property and just a few minutes from Tropea.  Your cooking program includes hands-on cooking classes and tours too.

From the day you arrive, you will be immersed in Calabrian cooking, culture and flavors of the region.  Join AnnaMaria and Giuseppe, husband and wife team, along with Fabrizio their son, in the heart of Capo Vaticano. The family welcomes you to their region, where they have been hosting guest for over 35 years at their 3 star property.  During your stay, enjoy Calabria with its gorgeous food, music and traditions, while cooking and becoming a part of family.  Chef Tony leads you in hands-on cooking classes featuring local and seasonal ingredients from their land, while Fabrizio takes care of every excursion and request from check in to departure.  From your Chef’s Welcome Dinner that includes music and dancing, to your cooking classes and right up to your departure, this vacation is one that you will never forget!

Calabria

Luckily for us, many of the wonderful qualities of Calabria that delighted Norman Douglas back in 1915 are still there to be enjoyed by visitors today: the enviable climate, the beautiful beaches, magnificent, untamed countryside, hillside villages and every so often a Norman church or a Greek ruin to remind us of Calabria’s eclectic past. Add to that, the fact that many parts of Calabria are far from the well-worn tourist track and this area of Italy becomes utterly irresistible to travelers who wish to discover the other face of Italy and immerse themselves in a culture rich in traditions and history.

You will visit Tropea the land of the red onion~ and historic village nestled next to the Tyrrhenian Sea. Here you will discover the cipolle di Tropea, the sweet, red onions that have made the village so famous. As you browse through local produce markets, be sure to purchase the delicious and colorful peperoncinos, which decorate store windows and are also jarred in olive oil and stuffed with capers. These little chili peppers pack a big punch in dishes like nduja, Calabria’s famous pork pâté with minced peperoncini.

During your stay, you will travel with your English speaking guide to Tropea for a fun-filled cultural visit that takes you to beaches and landmarks.  Discover the beauty and taste new foods, while exploring a city that is steeped in tradition.  There is a tranquility here as you tour some of the most beautiful beaches the region has to offer. Nicknamed Costa Degli Dei – Coast of the Gods – this peaceful town features white granite cliffs giving way to sparkling blue waters below in a dramatic display of natural beauty.  Often, capers grow wild in coastal areas such as these, and are much used in local Calabrian cuisine.

Then you’ll explore the ancient fishing village of Scilla!  Seventeenth -century buildings still stand proudly upon cliffs casting their gaze across the seas toward Sicily. Here, local culinary fare centers around freshly caught seafood like swordfish, tuna, and a regional fish called spatola (silver scabbard fish) – all of which are still caught using techniques that are hundreds of years old. Stay for the day, enjoy lunch (we will take you to the most famous restaurant in Scilla) and chose from a local menu featuring the fare of the region. (Lunch not included).

Cooking Classes ~ Calabria

Chef Tony and the family welcomes you to the kitchen for hands-on cooking classes with seasonal, local ingredients.  You will prepare Calabrese recipes from antipasto, pasta, main course and desserts; all with a toast of wine. You’ll be slicing, dicing and preparing recipes, while learning cooking secrets and new recipes each day. His cooking style incorporates the region’s most prized ingredients, which are showcased in every recipe he makes.  While you are cooking up a storm you will also learn about traditional culinary foods and ancient recipes that have been passed down from generation to generation.  The family’s passion for cooking is evident in every cooking class!

Join the family and learn how to cook like a local.  Chef Tony also respects every food request, including vegetarian, gluten-free.

Calabrian Cuisine

Calabria’s gastronomy reflects its mixed history, the meeting of past and present represented by the region’s typical products: red onions from Tropea, chilli peppers, red potatoes and porcini mushrooms from the Sila plateaux, clementines from Corigliano, bergamot from the Reggio Calabria area, citrons from the Riviera dei Cedri, liquorice from Rossano, and olives from the Piana di Gioia. Then there are all sorts of vegetables and meat, different types of salami, the most famous the rustic nduja, a creamy pâté that is really hot and extremely delicious, pecorino cheese and so much more. Fish is also popular: sword fish in the Reggio Calabria area is an age old tradition and it is still not uncommon to see men out on the typical boat used for fishing swordfish, felucca or lustro, characterized by a sighting platform and an extended deck.

The most typical and flavor some fish that can be tasted in Calabria has several different names, all of which mean the same thing: neonata, nudilla, rosamarina, nannata, bianchetti: newly born fish (sardines) preserved in oil and spiced up with scarlet flakes of chilli pepper. These tiny fish aren’t always available because the fishing season is limited to a specific short time in winter, so they are often conserved, and are so delicious they are known as the caviar of Calabria.

Accommodations

The family welcomes you to their property in Capo Vaticano with comfortable rooms, a swimming pool, daily breakfast and maid service.  Air conditioning and ensuite bathrooms with modern amenities, hairdriers, make your stay as comfy as possible.  A healthy daily breakfast is included with  hot croissants, chocolate, fresh milk, coffee, tea (various species), homemade pastries, fruit (varies according to the seasons), shortbread biscuits, cereals, muesli, yogurt, juices, artisan breads with condiments of butter, homemade jams, organic honey, chocolate spread, salami and cheese are just a few of the hearty choices.

The property is very close to the surrounding villages and historic town of Tropea, along with beaches, cafés and shopping just minutes away.  And if you happen to be there on August 13, you will also experience the “celebration of the famous Tropea onion.” See and taste the prized red onions that are showcased in every marketplace and restaurant.  There is even a prize for the best ones!

Itinerary 5 days, 4 nights

Day 1:  Welcome Aperitivo & Chef’s Welcome Dinner

  • Arrival and transfer to your property.
  • Check in relax.
  • Welcome aperitivo and overview of the cooking program.
  • A special Calabrian Welcome Dinner with regional foods including a full course menu with folkloric music and dancing.

Day 2:  Guided Tour to  Tropea & Cooking Class 1

  • Enjoy a buffet style full breakfast, included.
  • After breakfast you will have a guided tour of Tropea with English speaking guide.
  • Return to the property after the tour.
  • In the afternoon, cooking class 1. You will learn how to make homemade pasta and a main course with a dessert.  Everyone dines together on the foods prepared in the cooking class and wine is included.

Day 3:  Tour to Scilla & Lunch

  • Enjoy a buffet style full breakfast, included.
  • Excursion to Scilla the ancient sea town, we will suggest the most famous restaurant for lunch.  (Lunch not included).
  • Return to property.  A full course dinner included with a toast of wine included.

Day 4:  Guided Tour to Capo Vaticano

  • Enjoy a buffet style full breakfast, included.
  • Morning excursion to Capo Vaticano.
  • Take the afternoon to explore, relax, shop or soak up the sun.
  • Dinner is on your own.

Day 5:  Cooking Class & Farewell Dinner

  • Enjoy a buffet style full breakfast, included.
  • Cooking Class 2.  You will learn how to make homemade pasta and a main course with a dessert.  Everyone dines together on the foods prepared in the cooking class and wine is included.
  • Farewell Dinner included with a local wine included.

Day 6: Arrivederci Calabria

  • Enjoy a buffet style full breakfast, included.
  • Check out and transfer to airport or train station.  Arrivederci e a presto!

Call for updated rates. Airfare not included. Group transfers for any cooking tour or tours that include transfers, are for the group and are not private. Transfers before, after or to another destination outside of your cooking tour are not included in the program price.
