For those who love nature, exquisite produce, and old world traditions, join us in Umbria’s Fields Of Saffron cooking tour which takes you deep within the green heart of Italy, to a beautifully restored farmhouse B&B in the rolling Umbrian countryside. You will be surrounded by gentle green hills, olive groves, vineyards, and fields of saffron, while you learn to cook with Chef Gianluca in his country kitchen turning delicious organic produce grown on the property into traditional Umbrian cuisine.  Just north of Orvieto and nestled on the boarder of Tuscany and Umbria, cook, tour, taste and sip the food and wine of the green hills of Umbria.  Visit Orvieto, Citta della Piever

Learn how to combine ingredients, artfully present them, and prepare perfect pasta, fresh homemade tagliatelle and pici, risotto, different type of gnocchi and a variety of traditional soups.  There are also cooking lessons on bread making- pane & focaccia, and recipes based on the area’s very tasty Chianina meat stewed in the farm’s olive oil, or roasted lamb with different delicious side dishes. Last but not least, learn how to create wonderful desserts including tiramisu, pannacotta, crostata, cantucci, and different biscotti. During your stay, visit local food artisans, sample the area’s exquisite saffron and enjoy informal wine and olive oil tastings explaining the local grape and olive varieties. Visit the picturesque medieval town of Todi and spend an afternoon wandering the pretty streets of Orvieto, stopping off, of course, to visit its stunning cathedral.

Umbria Cooking Classes

The farmhouse’s spacious and well-equipped kitchen has a large open hearth and provides the venue for classes. Chef Gianluca teaches each participant about regional cuisine and how it’s is representative of its culture, a way of being sociable and expressing creativity. But it is also a way of getting to know the traditions of the region you are visiting, and his classes are perfect for those who want to discover the flavors and traditions of Umbrian cuisine. Lessons include menu planning, hands-on cooking classes in a warm, friendly kitchen.  You will learn about the local wines of the region and pairings with regional seasonal cuisine.  Gianluca emphasizes simplicity in his cooking style using quality fresh products. Organic farming on the property using the seasonal produce grown in the season, is a rule of the kitchen with Chef Gianluca.  During each cooking class you will prepare a full three-course menu, which you will then enjoy for lunch, accompanied by local wine.

Umbria, The Green Heart Of Italy

The region of Umbria is traditionally considered the green heart of Italy. As a guest, you will certainly be enchanted by the dazzling views of centuries-old villages perched atop radiant green, rolling Umbrian hillsides. Umbria is internationally known for the quality of its wines and olive oil, both of which have been produced and exported for centuries. Your farmhouse B&B is set nestled between Tuscany and Umbria, not too far from Rome, and within easy reach off the main highway. It’s great location makes a day trip to Orvieto and Città della Pieve, Lake Trasimeno, Perugia, Val d’Orcia or Montepulciano, just a short drive away.

Accommodations

The Umbrian farmhouse is set on a country estate and features two stone palazzos, each of which have been restored adding modern amenities, while preserving many of the original features. Organic farming is practiced here and this is reflected in the environmentally friendly methods and foods used at the property. The farmhouse B&B has nine guest bedrooms.  Each bedroom offers spacious, bright and tastefully furnished accommodations with careful attention to detail. Each bedroom has a large private ensuite bathroom. In summertime, breakfast is served in the garden, and at other times of year, the cozy dining room in the main house sets the scene. Breakfast includes a wholesome selection of local homemade cakes, biscuits, toast, honey, yogurt, jams and fresh farm eggs with café, tea and milk too. An old-world beautifully restored oven, is just by the farmhouse.  And in keeping with the old world feel, two stone washing baths used for washing linens from bygones past remain on the property. A garden path winds through the property making for an inviting morning walk through the greens. A swimming pool offering 180-degree views across the valley, is also available for guests.

Itinerary ~ 6 days, 5 nights

Day 1: Arrival & Welcome Dinner

  • Arrival at Chiusi train station.
  • Transfer to the property, check in and relax.
  • A welcome dinner prepared by Chef Gianluca with local wine is served in the farmhouse’s dining-room.

Day Two: Cooking Class 1 & Visit The Fields Of Saffron

  • Breakfast is served.
  • After breakfast, meet for your first hands-on cooking class with Chef Gianluca who will explain his philosophy on the area’s cuisine, cultural secrets of cooking and traditions. With the guidance of Gianluca in the kitchen, create a delicious full course menu based on the fresh, seasonal produce cultivated on the farm. Lunch follows with the foods prepared in class. Wine and water included.
  • In the afternoon, enjoy a trip to Città della Pieve to visit a saffron farm. Learn more about the fascinating history and production of this, the world’s most expensive spice and how it is used in the local cuisine. Also included is a visit to the local wine bar where we will enjoy an aperitif accompanied with saffron and truffle snacks.
  • Dinner on your own. Suggestion – Marina will drive you to a local restaurant and arrange for transfer home.

Day Three: Excursion To Todi & Orvieto

  • Breakfast is served.
  • After breakfast, excursion with private driver to Todi and Orvieto. Todi is a medieval jewel whose main square is often used as a set for movies, and the Duomo and Palazzo del Capitano are true delights. Then it’s on to Orvieto where you will be offered lunch in a quiet trattoria.  There are some great food and wine shops in Orvieto where you can pick up local specialties like wild boar hams and salami, pecorino cheese with black truffles, olive oil and wonderful dried pastas. There are also great cafés for soaking in the culture or a little people watching.
  • Late afternoon, return to residence.
  • Enjoy dinner at the farmhouse B&B featuring a selection of Gianluca’s best-loved dishes. Local wine included.

Day Four: Market Visit, Cooking Class 2 & Wine Tasting

  • Breakfast is served.
  • After breakfast, we will explore the local food market where you’ll mingle with locals and vendors.   If the market happens to be closed that day, we will visit the local butcher  and vegetable farmer’s stand. Then it is off to the kitchen, where you will roll up your sleeves for your second hands-on cooking class, and create a full seasonal menu. Lunch follows with the foods prepared in class. Local wine and water included.
  • In the afternoon, we visit a vineyard overlooking Orvieto where great super Umbrian wines are produced.
  • Dinner on your own. Suggestion – Marina will drive you to a local restaurant and arrange for transfer home.

Day Five: Cooking Class 3 & Farewell Dinner

  • Breakfast is served.
  • After breakfast, meet in the kitchen for your third hands-on cooking class with Chef Gianluca for your next delicious full menu based on the fresh, seasonal produce cultivated on the farm. Lunch follows with the foods prepared in class. Local wine and water included.
  • Afternoon free to take a walk, go for a bicycle ride or simply relax by the pool and soak up your beautiful surroundings.
  • In the evening, enjoy an olive oil tasting before your Farewell Dinner featuring a tasting menu prepared by Gianluca. Local wine and water included.

 Day Six: Check Out & Arrivederci

  • Breakfast is served.
  • Check out & Arrivederci!
  • Transfer to Chiusi train station.
