Learn the simplicity and technique from Chef Giò in small group classes where you will be preparing antipasto, fresh pasta, risotto, main courses and desserts. During your stay you will also visit a typical winery with an informal discussion and tastings too. Ischia, a volcanic island, is noted for its natural springs and medicinal treatments. Visit the natural spa, Negombo where you can indulge in over temperature-controlled swimming pools, saunas, mud baths and more. Learn to prepare local fish, and the Island’s signature recipe,-wild rabbit! The wonderful micro-climate of Ischia makes for the perfect recipe for cherry red tomatoes, basil, lush vegetables & fruits, fish and wine!

Cooking Classes

Experience the culinary delights of traditional Ischitan cuisine in your hands-on cooking classes. The professional kitchen, led by Executive Chef Giò and his team of award-winning chefs, is the setting for your cooking experience. Executive Chef Giò’s philosophy is, simplicity, and he says “you must taste the flavor of each food on its own.

Traditional recipes are prepared with typical regional and island products, with a modern interpretation by this young, dynamic Executive Chef team. On the menu, coniglio all’ischitana (wild rabbit), the island’s most famous dish, is rabbit in white wine, cherry tomatoes, garlic, and chili pepper; sgombro,(wild mackerel), calamari, (octopus), and alici, (anchovies). Chef Giò uses his garden aromatic herbs, basil, oregano, sage, parsley, rosemary, and chili peppers; along with exotic fresh fruits and vegetables that grow in the volcanic. The local lemons play a big part in local cooking and are used in everything including fresh pasta, fish, meats, marmalade, biscotti, chocolate and limoncello. The fertile soil around Mount Epomeo produces high-quality wines, which include the white Forastera and Biancolella, and the red Piedirosso and Guarnaccia.

Everyone joins around the table and enjoys the foods that were made in class following. Local wine, dessert and great conversation always included.

Ischia

First impressions of Ischia generally fall somewhere between awe and wonderment. While Capri, its neighboring isle, wows you with its charm, Ischia gently casts its spell over you. Ischia, volcanic in origin, has a hidden reservoir of seething molten matter from which come the famous thermal springs, said to cure all that ails. As early as 1580, Dr. Giulio Iasolino had discovered the mineral wells of Ischia and wrote a book about it to tell the world.

As you arrive by ferry, the island quickly comes into view offering its splendor of rolling green hills that line the craggy shore. As you sail closer to the port, see the bustling port filled with yachts large and small. Lush greenery dotted by ancient ruins gives Ischia its nickname, “Italy’s emerald isle.” Located just 17 miles off the coast of Naples, Ischia was first settled by the Greeks in the 8th century BC, and later became a favorite of the Emperor Augustus. Known for its natural luxuriant landscapes, it has remained largely untouched by commercialization, and is a welcome alternative to glamorous Capri.

The terme, or thermal spas, represent one of the most famous attractions on the island. Private spas, located throughout the island, with luxurious swimming pools built on natural hot water springs with salt water and thermal pools, natural holistic baths, a score of beauty treatments, and an atmosphere of total relaxation, make Ischia a must-see.

Ischia, though just a short ferry ride from the mainland, has a cooking style of its own. Here, wild rabbit is the specialty, and every Ischitan will tell you that their rabbit, cooked only with the island’s unique white wine, is the best. Greek influence blends with Italian for a symphony of flavor! Wine growing villages dot the island beneath the lush volcanic slopes of Mount Epomeo making Ischia’s wine production quite interesting.

The island architecture has a strong Greek influence, rightfully so as it was first settled by the Greeks. Ancient villas in pearly whites dot the green landscape. Its inhabitants, the Ischianas, are warm and welcoming and ready to share their food, culture and lifestyle with every visitor.

Accommodations

Your luxurious five-star hotel is located at the Casamicciola Terme, a convenient location and just a few minutes away from the town center. Casamicciola is lined with boutiques, cafès and restaurants and strategically located between the main Port and Lacco Ameno. The hotel which has been recently restored, maintains its classic architecture while blending modern accents. The interior reflects the history of the island of Ischia itself, including the different dominant cultures throughout the ages, from the Greek to the Aragonese, the Romans to the Saracens, in a masterful blend of styles that creates a welcoming and intimate atmosphere.

Rooms are simple and elegant, based on classic Mediterranean lines, each decorated in traditional style with charming soft pastel colors, and all face the internal garden. Saturday: Arrival & Welcome

Sunday: Sorgeto Baths

  • Breakfast is served.
  • After breakfast, travel to the Bay of Sorgeto for bathing in the soothing thermal springs, where the volcanic minerals are said to cure all ailments.
  • Afternoon free to enjoy the spa at the Hotel.
  • Dinner is served at the hotel.

Monday: Ischia Vineyards & Cooking Class 1

  • Breakfast is served.
  • Following breakfast, you will tour the island by bus with a stop at a local winery. Tastings included.
  • Return to the hotel in the afternoon, meet for your hands-on Cooking Class 1. Dinner follows in the foods prepared in class.

Tuesday: La Mortella Botanic Gardens

  • Breakfast is served.
  • Enjoy a morning visit to the beautiful La Mortella Botanic Gardens, developed by Susana Walton, the wife of the British composer Sir William Walton, and held to be one of the most beautiful private gardens in Italy.
  • Afternoon free.
  • Dinner is served at the hotel.

Wednesday: Negombo Thermal Baths

  • Breakfast is served.
  • Morning free and lunch on your own.
  • Enjoy a relaxing excursion to the beautiful and exclusive Negombo Thermal Baths for an afternoon of hot springs, thermal baths and spa services.
  • Return to the hotel in the early evening.
  • Dinner is served at the hotel.

Thursday: Cooking Class 2

  • Breakfast is served.
  • Following breakfast, meet Chef Giò for your Cooking Class 2.
  • Lunch follows on the foods prepared in class.
  • Afternoon free to enjoy free time, relax and explore the beautiful landscape.
  • Dinner is served at the hotel.

Friday: Cooking Class 3

  • Breakfast is served.
  • Following breakfast, meet for your third hands-on cooking class with Chef Giò.
  • Lunch follows on the foods prepared in class.
  • Afternoon, enjoy free time to relax and explore the landscape of the Emerald Island.
  • Dinner is served at the hotel.

Saturday: Departure

  • Breakfast is served.
  • Check out and departure transfer to Naples airport or Train Station. Arrivederci!
