Discover Genova, Liguria’s capital, with local guide and food lover Francesca, followed by a hands-on cooking class with Chef Stefano! Together the food-loving pair will have you learning about the city’s rich history, culture, culinary traditions, food and wine, while cooking the delicious foods of the region.

In your hands-on cooking class you’ll discover the secrets of making authentic Ligurian fresh pasta, traditional sauces and desserts. Learn the art of preparing Stefano’s recipes in his home kitchen using the freshest seasonal ingredients with menus based on the season, including 2 fresh pastas, 2 sauces and a dessert. Best of all, you will be able to recreate each recipe at home in your kitchen.

 

Pasta-Making Class

Join Chef Stefano in his home kitchen for a hands-on cooking class that takes you full circle preparing the local pastas, sauces, and dessert of the region.

Under the guidance of Stefano, you will learn the technique for mixing, kneading, rolling and creating perfect pansoti, ravioli and gnocchi prepared with delicious fillings and sauces such as burro e salvia, butter and sage, walnut sauce, leeks and famous Ligurian pesto! Local traditional desserts such as sweet, Biancomangiare, Italian cream pudding, amaretti and cubeli cookies, are examples.

Program Includes

  • Hand-on cooking class including the preparation of 2 fresh pastas, 2 sauces and dessert in the home kitchen with Chef Stefano.
  • Lunch follows and everyone enjoys the food that was prepared during class, local wine included.
Program Price:

$260 per person, based on minimum of 2 people, including all taxes and Italian VAT.
$310 per person, if you are the only person in the cooking class.

Pasta-Making Class & Market Tour

Francesca will start the day with a visit to the colorful artisan market the Mercato Orientale, one of the oldest outside markets in Italy that showcases vendors, food shops and purveyors. Learn about Liguria’s produce, spices, pesto, cheese and products of the city such as Formaggetta Savonese, the creamy local hand-made cheese, hand-made focaccia and the precious taggiasca olives that go into making the Ligurian olive oil. Discover interesting food shops stocked with local products led by Francesca for an insider’s view on food, wine and culinary food notes. Featured in your tour is a stop at the prized focaccia maker for a taste of this region’s flat bread topped with olive oil.

Following the market and artisan shop tour, everyone joins in for their cooking class with Chef Stefano. He takes you full circle preparing many kinds of local pasta like pansoti, ravioli, gnocchi and polenta, prepared with sauces such as burro e salvia, butter and sage, walnut sauce, or leeks and famous Ligurian pesto made with sweet locally grown basil! Local traditional desserts such as sweet, Biancomangiare, Italian cream pudding, amaretti and cubeli cookies, are examples.
