Cooking Classes are two and a half to three hours, and may run more as we are in Italy, with lunch or dinner following. Groups are kept to an intimate size from 2 to 6 guests and everyone enjoys the food that was prepared in the class to follow.  Local wine and water included.

Neapolitan Cooking In Positano

Traditional Southern Italian Menu

Join Chefs Filomena, Fortunata, Giuseppe and Raffaele as they team up in the kitchen for an authentic hands-on cooking course preparing Neapolitan recipes. Learn about the treasures of this region’s cooking style using local fresh organic fish, meat, fruits and vegetables of the Amalfi Coast. Our chefs follow the farm-to-table way of life using in season produce and products.  Learn to cook Neapolitan cuisine, while you learn how the tomato made its way into Italian cooking, and where and when pasta was first invented. Join us for an authentic, fun-filled class and learn how to make a selection of seasonal recipes such as Pezzogna all’Acqua Pazza, fresh local white fish slow-cooked with herbs and sweet cherry tomatoes; Linguine Con Gamberetti & Fiori di Zucca, fresh bright orange squash flowers sautéed with pink baby shrimp served with linguine; Boscaiola, Neapolitan pasta with mushrooms, Tonno, fresh local tuna simmered with capers & olives; Mozzarella con Foglie di Limone, Mozzarella cheese grilled with lemon leaves, and Involtini di Melanzane, stuffed eggplant rolls.  Neapolitan desserts are delicious – think – Torta Caprese, a flourless chocolate cake, or Tiramisual Limone, our Chef’s signature dessert using local Amalfi lemons.  All of the recipes can easily be recreated in our home kitchen.

The cooking class is hosted in our professional kitchen in the seaside village of Positano set on the Amalfi coast. This cooking class focuses on the healthy Mediterranean diet, using our own 100% extra virgin, first-cold-pressed, olive oil.  The warm Mediterranean climate, fertile volcanic soil and sea breeze provide the perfect microclimate for healthy abundant produce in southern Italy.

Tie on your apron and get cooking using Old World recipes and modern techniques preparing:  antipasti, first courses – fresh hand-made pasta and risotto, second courses and dessert.  Following the cooking class, everyone enjoys the food that was prepared in the kitchen.  Toast with a glass of Aglianico, red wine, or Falanghina, white wine, and a delicious Neapolitan dessert – delizia al limone, a delicate sponge cake soaked in limoncello and filled with yellow cooked cream or profiteroles or rum soaked Babà.

This class features our Lemon Lifestyle menu, using the bright yellow organic Positano lemons that grow on the Amalfi Coast. Learn how to make a lemon-inspired menu including an array of fresh vegetables drizzled with lemon oil or a lemon infused antipasto; pasta served with a delicate lemon sauce; grilled fish wrapped in lemon leaves and for a sweet ending~ torta di limone for dessert. All of the recipes can easily be recreated in our home kitchen.

Tie on your apron and get cooking in our hands-on pasta making class. Our pasta making class, led by Chefs Filomena, Giuseppe, Raffaele and Raffaele in Positano, is for those guests who love Italian pasta.  Learn how to make fresh pasta from start to finish.  You will mix, roll and form the pasta dough into delicious ravioli, gnocchi or cavatelli – to name a few.  Our chefs also share their Italian recipes and philosophy of preparing seasonal sauces for each pasta because in Italy – each pasta has its own sauce.  There are over 1000 pastas in Italy!  This hands-on pasta making class features fresh pasta making techniques, as well as sauce preparation including cherry tomatoes, lemon sauce, fresh seasonal vegetables, along with fish or meat sauces too.  Recipes are based on the healthy Mediterranean diet. Each guest will prepare 2 pastas and 2 sauces with an antipasto and dessert!  A toast of local red or white wine is included.  All of the recipes can easily be recreated in our home kitchen. Pizza-Making With Chef Antonio

Knead, Roll Out & Spin Your Way To The Perfect Pizza

Join our professional pizzaioli, Chefs Fortunata, Raffaele and Antonio who will show you techniques and methods for making true Neapolitan pizza the Old World way.  Our chefs mastered their craft with the best artisans at the Pizza Academy in Naples.  They will teach you techniques for mixing the dough and rolling into a perfect round pizza along with preparing and selection seasonal toppings such as mozzarella cheese, salumi, tomatoes, grilled eggplant, zucchini, alici – small white bait – to name a few.  Learn how to “punch” the, and “drive” it too – just like a pro.  Following the prep, you will see how to bake it to perfection in a wood-burning! Learning to make pizza in Italy is an art, and our pizzaioli show you just what it takes to create the perfect pizza.

You will also make a traditional antipasto and dessert.  All of the recipes can easily be recreated in our home kitchen. Join our team of Chefs Filomena, Raffaele and Giuseppe in the sea side town of Positano for Big Fish menu featuring local Mediterranean fish recipes. The hands-on fish only cooking class teaches you how to clean the various local fish and then prepare transforming ingredients into delicious lunch and dinner.  You will make an antipasto, fresh pasta with seafood, a main fish course and dessert – Mediterranean fish are light, white and clean tasting – think orata, pezzogna, dentice, pesce San Pietro, easy to prepare and healthy for the heart.  Classes are hands-on and feature local seasonal ingredients.  All menus vary by season using farm-to-table ingredients.  Following the cooking class, everyone enjoys the food that was prepared in the class together. Mix, Knead & Bake Italian Breads

Join our professional Chefs in a hands-on artisan bread making class where you will learn techniques on how to mix the various types of flours and ingredients, then shape loaves, and bake – while learning about the importance of oven temperatures. Our expert chefs share specialty bread recipes along with recipes for bread with nuts, olives, cheese, vegetables and even prosciutto. Learning to make artisan bread is an art and our chefs show you how!

Bread, like all food in Italy, changes with the region. Along the Amalfi Coast, traditional bread includes: grissini, panini, focaccia, taralli, pane con olive, noci, fennel seeds and multi grains, gluten free, pizza rustica (bite-size breads stuffed with ham, cheese and vegetables), ciambella, pagnotta and pane cafone. Holiday breads such as Colomba di Pasqua and Panettone di Natale are also included in the bread making class when in season.

The Art Of Making Sfogliatella Santa Rosa

Join our professional Pastry Chef, Filo, who will teach you the fine art of making Sfogliatelle. This speciality baking class will show you technique, method and steps of preparing the delicious Sfogliatella Santa Rosa. Using high quality farm-fresh local ingredients, mix, knead and roll the dough that will transform into delicate and the crispy shell-shaped pastry filled with cooked cream and orange zest.

This delicate and delicious pastry, which is well known and available in pastry shops along the Amalfi Coast, originated in the Monastery of Santa Rosa in the early 1700s. The pastries were first made by the nuns, the pastry is so delicious that their popularity soared turning them into the most popular traditional Neapolitan dessert.  Following the baking class, tastings with caffè, cappuccino and Sfogliatelle.

Taste Your Way Through Positano!

Join us in Positano and discover the food, wine and history of this beautiful town on the sea with our English-speaking guide.  Follow the cobblestone walkways with stops along the way while learning about this old fishing village, Neapolitan pizza, pasta and gelato.  We’ll visit the local fishermen, fruit and vegetable artisans, limoncello maker, and baker for an introduction on Neapolitan desserts like Caprese, Capri cake, sfogliatella and delizia al limone.

Discover the local sfusato lemons, their importance in cooking and how they’re used to make limoncello.  Tastings along the way including local salumi to artisan cheeses, and Neapolitan desserts – while soaking up the beauty of Positano, the Pearl of the Amalfi Coast.

This one-day food tour takes you through Positano – once a Roman seaside resort turned sleepy fishing village rediscovered after World War II.  Learn about farm-to-table fruits, vegetables and produce used in the Mediterranean diet and pick up some cooking tips too.  Then, we’ll stop for a caffè, while questions are answered and new friends are made.

As our tour continues, see where John Steinbeck lived while he wrote “Positano,” and Italian filmmaker, Franco Zeffirelli’s, villa, now a 5 Star luxury resort.  Join us and discover the food and beauty of Positano.

Amalfi Coast Mozzarella & Limoncello Tasting Tour™

Mozzarella Cheese & Limoncello Tour With Tastings On The Amalfi Coast

Your private driver will pick you up at your hotel for an early morning departure from Positano, Praiano, Sorrento*, Amalfi* or Ravello* for our Mozzarella and Limoncello tour to the hills of the Amalfi Coast.  Along the way, take in the breathtaking views of the landscape of Positano and the Amalfi Coast where mountains and sea meet, and pastel color houses hang on a vertical terrain.

We continue through winding green hills and to this farm land where you will discover the art of Mozzarella and old-world cheese making with our expert artisan cheese maker, Il Signor and his family.  They have carried on the tradition for almost 100 years and continue to produce local cheese by hand made from the milk taken from the cows on his farm,  Watch as they magically turn milk into creamy cheese, weaving it into braids and twists and rounds. Tour the garden, farm and studio workplace, where artisans are busy at work.  The family also grows their own natural lemons and fruit, and makes delicious jams and limoncello.  Watch as they transform sfusato lemons into delicios limoncello.

Learn the history of the Amalfi Coast sfusato lemons and how they first were made into limoncello.  We tour the workplace, see the process of limoncello making – each lemon is hand-peeled, cut and put into alcohol, followed by a limoncello tasting.  Il Signor follows the COVAL way of growing the prized organic lemons, which are hand-picked freshly every day, then transforms them into limoncello, marmalade, citrus confections and panettone at Christmas time. The tour also includes our Lemon Lifestyle Recipe Book filled with lemon recipes – with the recipe for limoncello, cheese and other regional recipes from Positano and the Amalfi Coast.

Join Chef Raffaele for a rainbow of tastes and colors in a special dessert, gelato & sorbetto making class in the heart of Positano.

Start with fresh milk and local Mediterranean fruit, as he takes you step-by-step through the artisan craft of making creamy sweet gelato and sweet seasonal sorbetto. Kiwi, lemon, watermelon, chocolate, Baci, hazelnut, chestnut and more are just a sampling of the flavors. Bake and make local regional desserts including Capri Cake, Lemon Tiramisu, or the famous chocolate eggplant lasagna. Give your sweet tooth a treat in this workshop where you will be making local desserts and natural gelato & sorbetto by the mounds. Tastings follow the informative, fun and hands-on class which focuses on the dessets or the ice-cream making. This class is a great choice for children and adults. Join Anna, professional guide, for your Amalfi Food Walk & Ravello Landmark Tour, learning about the local food, history and culture.  Discover Amalfi and Ravello like a local, while tasting great foods, add on this this tasty food tour.  Stroll to the fish market, cheese artisan and bread baker.  Also included is a stop at one of Amalfi’s most historic pastry, chocolate and gelato makers.  Tastings are included.  After Amalfi, your guide continues her tour in Ravello, with a visit to Villa Rufolo or Villa Cimbrone and the Terrazza dell’Infinito.  Stroll through Medieval Gardens, piazzas and pathways and by ancient landmarks while learning about the invaders, kings and queens, writers and movie stars who lived here. End in the piazza with a toast of Prosecco.  A 3-hour tour with our guide Anna or Alessio, tastings are included.

Learn To Make Limoncello & Taste Limoncello Dessert

Join us by the Tyrrhenian Sea in sunny Positano and learn how to make Limoncello. The Positano lemons, grown locally on the terraced hills, and used in making authentic DOP Limoncello, blossom and bloom four times per year. We start off the class with an informal discussion on the history behind the lemons and how they made their way on the Amalfi Coast. Learn our secrets on cooking with the Amalfi Coast lemons and take away with you our Lemon Lifestyle Recipe Booklet and a tasting sample of limoncello in a bottle.

Get peeling and watch the famous lemon liqueur come alive before your eyes. As the lemons bathe in the magic mixture, learn about the many different ways you can use limoncello in the kitchen. This informal discussion includes a tasting of limoncello and a tasting of a limoncello dessert. Our recipe for limoncello can easily be recreated at home.

Cooking On Capri ~ Chef Salvatore’s Family Kitchen™

Traditional Caprese Cooking Class~1 Day

Join Chef Salvatore, along with Signore Lucia and Anna in our Cooking On Capri tour. Chef Salvatore leads in hands-on cooking in his Mediterranean kitchen creating healthy cuisine prepared with seasonal products and garden fresh produce. Tradition is key in the kitchen as you will prepare such favorites as zucchini flowers stuffed with ricotta, hand made ravioli, grilled fish and chocolate Caprese!

Chef Salvatore’s Mediterranean kitchen is host to your hands-on cooking class, located at his family property on beautiful Capri. He will lead you through Neapolitan traditions with menus that change with the seasons. Tie on your apron and roll out ravioli capresi, prepare pesce al limone, torta caprese, and limoncello in an authentic hands-on experience featuring the cuisine of Capri. Special menu requests such as gluten free or vegetarian are available.

Salvatore starts out each day with a visit to his garden where he picks fresh fruits and vegetables. Signor Paolo the local fisherman brings his treasures from the sea each day, frattello Domenico produces naturally raised meats on the family’s farm, while the oven is hot baking island favorite desserts like delizia, torta and limone Caprese.

In each cooking class you will prepare an antipasto, pasta or ravioli or risotto, main course and dessert. Following the cooking class, everyone enjoys the foods that were prepared in class at the family table. Toast with a glass of wine, and end with a sweet Capri dessert!

“I don’t measure, I use my eyes, except in dessert making where precision is important,” he tells in a Neapolitan dialect. At sunrise he is out in the garden picking fresh mint, rosemary and giant yellow zucchini flowers. His Mediterranean garden is flowering with spring peas to poppies, summer roses and lavender, zucchini and eggplant, black cherries, oranges and lemons. “What’s in our garden is on our table,” he explains.

The hands-on Cooking Class begins at 10am or 4pm. Lunch or dinner follows and includes the food that was made in the cooking class. Wine and recipe book included.

Pizza-Making With Mamma Anna in Capri

Mix, Knead, & Bake The Perfect Neapolitan Pizza

Join Mamma Anna in her villa and garden on Capri for a true hands-on cooking experience where you will make authentic Neapolitan pizza, fried and baked, along with an antipasto and dessert.  Mamma Anna will show you how to make true Neapolitan pizza, hands-on mixing the dough, then rolling into perfect rounds for both baking and flash frying.

You will learn how to measure and mix the ingredients into a perfect pizza dough, watch it rise, then “punch and drive the dough”.  You will also create a delicious antipasto and dessert.  After the cooking class, everyone enjoys the antipasto, pizza and dessert prepared in class.  Toast with a great glass of Aglianico, red, or Falanghina, white, wine, soft drinks for the children, and end with a sweet dessert.  These recipes can easily be recreated at home.  Each guest receives a Chef’s shopping bag, apron and recipe book.

Wine Tasting Add On Option – Add on a wine tasting with your pizza class and learn about 3 exclusive wines of the area and how they pair with pizza!  Additional price is 45E per person.
