Join Chef Natalia in Palermo for Hands-On Cooking Classes & Shop With The Chef Food Tour and experience the sights, smells and colors of Palermo. Learn about foods of this great city, like Arancini, rice balls, Caponata, eggplant salad, Panella, thin ceci bread, Ricotta Salata, the local cheese, Beccafico, roasted Sicilian sardines and Cannoli and Cassata -the typical desserts that Sicily is so famous for. 

Your morning starts with a meet and greet in the Villa Kitchen where Natalia will prepare a steamy Sicilian café.  You can either chose from a Cooking Class only and head straight into the kitchen or Shop With The Chef Food Tour where you will taste and discover the magical ingredients of the Island. Lunch or dinner follows each cooking class and includes the foods prepared in class.  Everyone toasts with a local glass of Sicilian wine, which is included.

Natalia also produces award-winning Sicilian olive oil made in limited production, with a low acidity and delicious taste.  An olive oil tasting and discussion is included in every cooking class.

One-Day Palermo Cooking Class

Join Chef Natalia for a hands-on cooking class in her Villa kitchen.  Just a few minutes outside of the bustling center of the city, the property is surrounded by shady gardens, making it the perfect location for a long leisurely Sicilian lunch or dinner.

After an introduction and welcome, taste Natalia’s homemade extra virgin olive oil and learn about the olives of Sicily and how she makes her award-winning olive oil each season.

Next, tie on your apron and head into the kitchen for your hands-on cooking class.  Prepare your 4-course menu including an appetizer, first course (such as pasta or risotto), second course (meat, fish or vegetarian) and dessert.

Natalia’s specialty appetizers include arancini, Sicilian rice balls, and various flash-fried crocchè, vegetable croquettes. First courses are usually a pasta or risotto such as the timballo di anelletti, ring-pasta timbale with tomato sauce, timballo di capellini, angel hair pasta timbale with a white Parmesan-Mozzarella sauce, fresh short pasta such as ziti with cherry tomatoes and fresh basil pesto, penne pasta with Natalia’s lemon-infused olive oil, shaved Parmesan and grated lemon zest, and pasta tossed with summer zucchini and zucchini flowers. Second courses are either meat, fish or vegetarian such as slow-roasted pork with orange and pistachios, involtini di carne, meat roulade with breadcrumb filling, sarde a beccafico, sardines rolled with pine nuts and raisins, calamari ripieni, stuffed calamari, pizza rustica, savory ricotta pie or gateau di patate, baked mashed potatoes. Desserts include Natalia’s sweet ricotta tart, Sicilian custard with lemon zest and chocolate almond cake.

All menus vary and use local, fresh ingredients of the season will special attention paid to vegetarian requests, food allergies and diet restrictions.

Lunch or dinner follows on the foods prepared in class and everyone dines together on Villa’s garden terrace, weather permitting, or in the elegant dining room. Water, coffee and a glass of local red or white wine are included. Additional wine & beverages available at a surcharge.

Morning classes start at 10am & afternoon classes start at 5:30pm.

Shop With The Chef Food Tour & Cooking Class

Start off the morning at 9am with a steamy Sicilian café in Natalia’s Villa. The informal meet & greet introduces you to your program, and then it is off to the nearby food mercatinos including stops at the local baker, salumeria, groceria, fruttivendolo, fruit & vegetable seller, the Sicilian fishmonger and butcher for an introduction the island’s ingredients.  Learn about what’s in season, and see vendors shout out their daily specials.  The foods of Sicily, influenced by the Spanish and the Arabs, are a colorful combination of sweet and sour, nuts and chocolate, wholesome pasta, couscous and fine wine.  Special attention is paid to food allergies, likes and dislikes, and vegetarian menus are available too.

After your Shop With The Chef Tour, return to the peacefulness of the Villa set in a garden of green, tie on your apron and get cooking!  Following is your hands-on cooking class where Chef Natalia shares her food knowledge as you will be preparing a hands-on cooking class with a 4 course lunch or dinner with an antipasto, pasta, main course and dessert with wine included.

Natalia also shares the secret of her famous homemade extra virgin olive oil. Learn about the olives of Palermo, taste the flavors of the oil while learning techniques in using it in the kitchen.
